Elk w/ Jasmine Cilantro rice

By now you know I like to Play in the kitchen and throw flavors and textures together. Sometimes they fail by sometimes they just hit home and make it to the recipe book . This is one of my latest entries super easy, it was kid tested and kid approved, but ingredients matter to achieve the overall taste profile.

Elk Jasmine Cilantro rice

Ingredients:

1lbs of elk meat preferably whole muscle I Used backstrap as well and had a great outcome I like to cut them in 1.5 thick “steaks”

1 stick of butter

1/2 teaspoon of onion powder

1/2-1 teaspoon of salt

1/4-1/2 teaspoon of Chipotle Chile Pepper (the spice hunter)

2 table spoons of dark brown sugar

1/2 teaspoon of smoked paprika

1/2-3/4 cup of orange juice

2 Mahatma jasmine limon cilantro rice

1/2 cup of candied or plain walnuts

Directions:

In a crock pot , place 1/2 a stick of butter (sliced in pads), place meat on top of the butter, pour in the orange juice, add, 1/2 tea sp salt, onion powder, chipotle, paprika, then the brown sugar on top of the meat. then place the remaining butter pads on top of meat cook on low for 6-8 hours until you can easily pull the meat apart and shred with fork. Remove meat from the juices and shred on a cutting board than I like to go back through and mince with a knife. Replace the meat back into the juices taste for salt and add more accordingly. Cook two Mahatman limon cilantro rice packets in the micro wave I know, sacrilegious…. but I found that it tastes amazing even better than my own and it cooks in 90 sec.. Add the rice in with your minced meat and juices and mix thoroughly. I like to spoon into a bowl and add the walnuts on top for extra sweetness and texture. I t may sound strange but it takes the dish to the next level..
