Elk wellington bites

Looking for an innovative way to eat elk? I have just the recipe for you. This elk recipe works with beef as well just substitute the elk loins for filet mignon. So I’m always looking for new ways to enjoy game meat and for way to get my kids interested in game meat and in cooking. My om used to have me cook with her always and by the time I was 10 I was preparing full meals with great confidence. This is something I’ve always been grateful to my mom for.

My Utah Bull

Elk Wellington bites: Prep time is about 45 mins and cook time about 12mins..

Ingredients:

Crimini Mushrooms finely Chopped 4 cups

4 slices of thick cut applewood smoked bacon finely chopped

Fresh Thyme

Kerrigold salted butter 2 table spoon

3-4 loin steaks cubed in 3/4″ pieces

3 sheets of puff pastry ( I like Pepperidge Farms brand)

about 27 dried Rainier cherries

Wild blueberry Jam

Farmers cheese 6-8oz

smoked paprika

salt

black pepper

1/4 teaspoon of liquid smoke

1 lg egg

ELK Recipe instructions:

Trim and cut your elk lion and cut into cubes, Melt 1 table spoon of butter put into a glass/stainless bowl add 1/4 tspn of liquid smoke mix well add your elk cubes mix and coat well then give a light dusting of salt, pepper and paprika then set aside

Remove the puff pastry from the freezer because they take about 30 mins to thaw

Chop the mushrooms set aside

Chop you bacon set aside

de-stem the thyme and chop about 1/8 of a cup

In a large skillet or sauce pan render down the bacon on high heat once bacon is almost crisp, mix in your mushrooms and thyme cook time is about 8 mins until the mushrooms are soft and cooked through. set aside allow to cool

Once mixture is cool mix in 5-8 oz of the farmers cheese enough to make the mixture so that is sticks together well

Begin preheating your oven to 425 deg

Cut the puff pastry sheets into 9 smaller squares

Pastry Construction:

Place a 1/2 tspn of your mush room mixture on pastry square

push one rainier cherry into it

and then place one elk cube onto the mixture

Then begin to close the pastry around the mixture and elk meat into a pierogie or dumpling looking shape

Place them on the buttered cookie sheet with enough room for them to grow

beat one egg and with a brush put a even coating over each pastry

lightly dust salt over your freshly egg washed pastries and place in the oven

Place the cookie sheet mid oven set timer for 10 mins then check usually between 10-12 mins the pastry will be golden brown and your elk meat should be medium if you like medium rare meat then cut them a little bigger about 3/4″

Remove let sit for about 4mins before serving

Serve with a side of blueberry jam for dunking
