The Ultimate Elk Shepherd’s Pie (That Will Have Everyone Asking for Seconds)

This Elk Shepherd’s Pie takes everything you love about a classic casserole and gives it a wild game twist. Tender ground elk, fresh vegetables, creamy potatoes, and a blanket of melted cheese come together in one dish that’s hearty enough for a family dinner and impressive enough to serve to guests.

The best part? It’s incredibly forgiving. Have leftover mashed potatoes or baked potatoes from the night before? Perfect! This recipe was practically made for them.

Once it comes out of the oven with the cheese bubbling and golden brown, don’t expect leftovers. Your family and friends will be asking for seconds before they’ve even finished their first plate.


Ingredients

Filling

  • 1 pound ground elk
  • 1 zucchini, washed, sliced thin, and cut into half-moons
  • 2 carrots, peeled and diced small
  • 1 celery stalk, diced small
  • 2 tablespoons ghee (or butter)
  • 2 tablespoons fresh or dried dill, divided
  • Salt, to taste
  • Fresh cracked black pepper, to taste
  • 1 teaspoon onion powder
  • ½ pound Colby Jack cheese, shredded and divided
  • 1 tablespoon Caldo de Pollo (chicken bouillon)
  • ¼ cup hot water

Topping

  • About 25 small Yukon Gold potatoes, baked, smashed, and lightly salted (leftover baked potatoes work perfectly)

You can also substitute approximately 3–4 cups of mashed potatoes.


Instructions

Step 1: Cook the Vegetables

Heat the ghee in a large skillet over medium heat.

Add the zucchini, carrots, and celery. Cook until the vegetables begin to soften, about 8–10 minutes.

Season with:

  • Half of the dill
  • Salt
  • Black pepper
  • Onion powder

Once tender, remove the vegetables from the skillet and set aside.


Step 2: Brown the Elk

Using the same skillet, add the ground elk and cook until browned.

Season with black pepper .

Meanwhile, dissolve the Caldo de Pollo in ¼ cup of hot water.

When the elk is nearly finished cooking, stir in:

  • Half of the shredded cheese
  • The dissolved Caldo de Pollo mixture

Cook until the cheese melts and most of the liquid has been absorbed.

Return the cooked vegetables to the skillet and gently fold everything together until evenly combined.


Step 3: Assemble

Preheat your oven to 400°F.

Spread the elk and vegetable mixture evenly into a lightly greased 9 x 13-inch baking dish.

Top evenly with the smashed Yukon Gold potatoes or mashed.

Sprinkle the remaining shredded cheese over the potatoes.

Finish with the remaining dill.


Step 4: Bake

Bake for 20–25 minutes, or until the cheese is melted, bubbling, and beginning to crisp around the edges.

If you like an extra golden top, switch the oven to broil for the final 2–3 minutes, keeping a close eye on it.

Serve immediately.
