Ingredients
Burger
- 2 lbs ground venison
- 20% pork fat or beef fat (recommended for juiciness)
- Salt

- touch of onion powder
Toppings

- 2 tablespoons butter
- Salt and black pepper
- Toasted pecans, roughly chopped
- Hot honey
- Brioche buns
Optional:
- Fresh arugula
- Touch of cilantro for brightness

Directions
Build the Perfect Patty
Mix your ground venison with enough fat to reach roughly an 80/20 ratio. Venison is naturally lean, and the added fat keeps the burger juicy and flavorful.
Season generously with salt, pepper, and a touch of onion powder. Form into thick patties, making a slight indentation in the center to help them cook evenly.
Cook over medium-high heat until they reach your preferred doneness. During the final minute of cooking, top each burger with slices of Brie and allow the cheese to melt. I cooked mine on the smoker grill so it got another dimension of flavor.
Caramelize the Peaches
While the burgers cook, melt butter or ghee in a skillet over medium heat.

Toast the brioche buns. I made mine bunless to be a bit more “keto” friendly
